Easy and deliciois southwestern frittata Ingredients:
8 eggs |
1 can(11 oz) mexicorn or southwestern corn,drained |
1-1/2 c mexican style shredded cheese blend |
1/2 c mild salsa |
2 scallions,sliced |
2 tb chopped, fresh cilantro |
Directions:
1. Preheat oven to 400' In large bowl,whisk together eggs,corn,1 c cheese,salsa,scallions and cilantro. 2. Coat 10 nonstick skillet with cooking spray;heat over med heat. Add egg mixture. Cook till edges are set,2-3 mins. Remove from heat. Sprinkle with remaining 1/2 c cheese. 3. Bake till set in center,about 10 min. If desred,serve with guacamole,sour cream and salsa. |
