Tailgating or Parties or just for fun, this Dip is healthy and Good! From Recipe Club on the Net.
Ingredients:
1 (15 oz) can black beans, drained, rinsed and drained
1 (11 oz) can whole kernel corn, drained
1 or 2 tomatoes, seeded removed and coarsely chopped
1 bell pepper, seeded and chopped
1/2 cup green onion, sliced
1/2 cup seeded and chopped pepperoncini peppers (you can buy already seeded and sliced)
2 cloves chopped garlic (optional)
1/4 cup fresh cilantro, chopped
1 cup sour cream (can use low fat)
Directions:
1. Mix all vegetables and place in a tightly covered container. Chill.
2. When you are ready to serve, drain, stir in sour cream completely and serve with tortilla chips.
