Serve these as a side dish for brunch or dinner & you're sure to get rave reviews. Wonderful with a spoonful of sour cream Ingredients:
1/2 cup yellow cornmeal |
2 tblspn all-purpose flour |
1/2 tsp baking soda |
1/4 tsp salt |
1/8 tsp cayenne pepper |
1 tblsp vegetable oil |
3/4 cup buttermilk |
2 large eggs - lightly beaten |
1 cup corn kernels - thawed if frozen, drained if canned |
1/4 cup monterey jack cheese - grated - please see note below |
1/4 cup red bell pepper - finely diced |
2 green onions - thinly sliced |
2 tblsp chopped cilantro |
1 small hot chili pepper - minced |
note |
monterey jack cheese is not available in all countries, but a little research tells me that mozzarella or gouda are a good substitute |
Directions:
1. In a medium bowl, combine cornmeal, flour, soda, salt & cayenne pepper 2. Mix together the oil, buttermilk & egg 3. Stir into the cornmeal mixture just until combined 4. Fold in the corn, cheese, bell pepper, green onions, cilantro & chili pepper 5. Pre-heat a heavy duty frying pan ( cast iron is great) at medium/high heat for about 5 mins. 6. Drop batter onto pan by 1/4 cupfuls 7. Cook 3 - 4 mins or until golden, turning after half the cooking time 8. Repeat with remaining batter |
