Serve these as a side dish for brunch or dinner & you're sure to get rave reviews. Wonderful with a spoonful of sour cream
Ingredients:
1/2 cup yellow cornmeal
2 tblspn all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/8 tsp cayenne pepper
1 tblsp vegetable oil
3/4 cup buttermilk
2 large eggs - lightly beaten
1 cup corn kernels - thawed if frozen, drained if canned
1/4 cup monterey jack cheese - grated - please see note below
1/4 cup red bell pepper - finely diced
2 green onions - thinly sliced
2 tblsp chopped cilantro
1 small hot chili pepper - minced
note
monterey jack cheese is not available in all countries, but a little research tells me that mozzarella or gouda are a good substitute
Directions:
1. In a medium bowl, combine cornmeal, flour, soda, salt & cayenne pepper
2. Mix together the oil, buttermilk & egg
3. Stir into the cornmeal mixture just until combined
4. Fold in the corn, cheese, bell pepper, green onions, cilantro & chili pepper
5. Pre-heat a heavy duty frying pan ( cast iron is great) at medium/high heat for about 5 mins.
6. Drop batter onto pan by 1/4 cupfuls
7. Cook 3 - 4 mins or until golden, turning after half the cooking time
8. Repeat with remaining batter
