Found this tasty rendition on Ingle's Markets webpage. It really adds a lot of zip to ordinary corn off the cob. Can be increased to suit your needs. Ingredients:
5 ears corn, cleaned and kernels removed |
1 bell pepper, chopped |
1/4 cup onion, chopped |
2 tablespoons margarine |
1/4 teaspoon black pepper |
Directions:
1. Saute onions and bell pepper in margarine until soft. 2. Add corn and black pepper. 3. Cook over low heat for 10 minutes or until corn is tender, stirring ocassionally. |
