Easy One Dish Meals by Barbara C. Jones Ingredients:
4 cups cubed, cooked chicken breasts |
1 (16oz) can black beans, drained |
3/4 red onion, chopped |
1/2 red bell pepper, chopped |
1/2 yellow bell pepper, chopped |
1/4 cup chopped fresh cilantro |
1/2 cup sour cream |
1/4 cup mayonnaise |
1/2 tsp garlic powder (or to taste) |
salt (to taste) |
pepper (to taste) |
1 jalapeno pepper, seeded, finely chopped |
1 tsp lime juice |
1/2 cup pine nuts, toasted |
Directions:
1. Combine chicken, beans, onion, bell peppers, and cilantro in large bowl. 2. Whisk sour cream, and mayonnaise in small bowl. 3. Stir in garlic powder, jalapeno pepper and lime juice and add to chicken. Add a little salt and pepper to taste and toss. 4. Chill at least 1 hour. Just before serving, toss in pine nuts. Serve on a bed of lettuce. |
