Southwestern Chicken & Rice Taco Bell Version |

Recipe from the Taco Bell Home Originals booklet. Ingredients:
4 boneless skinless chicken breast halves |
1 cup taco bell thick & chunky salsa |
1 (1 1/2 ounce) package taco bell taco seasoning mix |
2 cups water |
2 cups original minute rice, uncooked |
1 cup black beans, drained (or 1 box zatarains black beans and rice instead of rice and beans separate) |
1 cup shredded kraft four-cheese mexican blend cheese |
sour cream, for topping |
Directions:
1. Bring chicken, salsa, taco seasoning mix and water to a boil in large skillet; cover. 2. Simmer 10 minutes. 3. Return to boil. 4. Stir in rice and beans. 5. Sprinkle with cheese; cover. 6. Cook on low heat 5 minutes. 7. Top with sour cream. 8. Serve hot. 9. The Zatarains gives it a little kick. If you don't like it too spicy use a mild salsa. |
