Ingredients:
2 cup(s) cornmeal |
1 cup(s) milk |
1 egg beaten |
1/4 cup(s) vegetable oil |
1/4 cup(s) salsa |
2 cup(s) monterey jack cheese shredded |
2 cup(s) cooked chicken diced |
1 cup(s) sour cream |
1 can(s) southwestern-style corn 11 ounces |
2 teaspoon(s) chili powder |
1/2 teaspoon(s) salt |
Directions:
1. Heat oven to 400°F. Coat a 7x11-inch glass baking dish with cooking spray. Combine corn meal mix, milk, egg, oil, salsa and 1 cup cheese. Pour into glass baking dish and bake 15 minutes. Remove from oven. Combine chicken, sour cream, corn, chili powder and salt. Spread over cornbread. Return to oven and bake 15 minutes. Top with remaining cheese, return to oven for 3 minutes or until cheese melts. |
