Southwestern Chicken and Fettuccine |

This was on the back of Red Gold can years ago. Putting it here for safe keeping. Talk about easy! Ingredients:
1 (9 ounce) package refrigerated fettuccine |
2 (14 1/2 ounce) cans red gold diced tomatoes with jalapenos |
1 (6 ounce) package southwestern chicken strips, cut into pieces (i use tyson brand) |
1 cup shredded monterey jack cheese |
1 medium avocado, peeled and chopped (optional) |
Directions:
1. Cook fettuccine according to package directions; drain well. In a large saucepan combine tomatoes and chicken. Cook over medium heat until thickened, about 10 minutes; stirring occasionally. Stir in fettuccine. Sprinkle individual servings with cheese and avocado if using. |
