Ingredients:
1/2 cup(s) olive
1/2 cup(s) white wine vinegar
1/4 cup(s) fresh lime juice
1/2 jar(s) roasted sweet red peppers drained and diced
3 whole(s) green oni minced
3 tablespoon(s) fresh cilantro chopped
1 teaspoon(s) sugar
1/2 teaspoon(s) salt
1/2 teaspoon(s) freshly ground pepper
1 block(s) sharp cheddar cheese 8 oz - chilled
1 block(s) monterey jack cheese with peppers 8 oz - chilled
1 block(s) philadelphia cream cheese 8 oz - chilled
Directions:
1. Whisk together first 3 ingredients until mixture is blended
2. Stir in diced red peppers and next 6 ingredients
3. Set marinade aside
4. Cut block of cheddar cheese in half lengthwise; cut halves cross-wise in to 1/4 inch thick slices.
5. Repeat above procedure with Monterey Jack and Cream Cheese
6. Arrange cheese slices alternatively in a shallow baking dish, standing slices on edge.
7. Pour marinade over cheeses.
8. Cover and chill at least 8 hours.
9. Serve with assorted crackers
