Quick stovetop method with a mexican touch. Ingredients:
1 1/2 lbs beef top sirloin steaks, cut into thin strips |
1 medium onion, sliced |
1 medium sweet red pepper, cut into thin strips |
2 tablespoons taco seasoning |
1/8 teaspoon salt |
1/8 teaspoon pepper |
1/8 teaspoon chili powder |
2 tablespoons canola oil |
1 (15 ounce) can black beans, rinsed and drained |
1 1/2 cups frozen corn, thawed |
1/2 cup picante sauce |
1 tablespoon cilantro leaf |
12 ounces hot cooked fettuccine (optional) |
Directions:
1. In a large skillet, stir-fry the beef, onion, red pepper strips, taco seasoning, salt, pepper, and chili powder in oil until meat is no longer pink. 2. Stir in the beans, corn, picante sauce, and cilantro, and heat through. 3. Serve with fettuccine if desired. |
