SOUTHWESTERN BAKED CORN CASSEROLE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Hawkins Estate in Dallas, Texas in 1982. Ingredients:
1 teaspoon vegetable oil |
1/2 cup chopped white onion |
1/4 cup butter softened |
8 ounce package cream cheese softened |
15 ounce can whole kernel corn drained |
15 ounce can creamed corn |
4 ounce can chopped green chilies |
1 teaspoon sugar |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
1 can fried onions divided |
Directions:
1. In small skillet heat oil over medium heat then sauté onion until translucent. 2. Combine butter and cream cheese then stir in corn, peppers, onion, sugar, salt and pepper. 3. Pour into greased square baking dish then bake at 350 for 15 minutes. 4. Remove from oven and stir in half of the fried onions. 5. Sprinkle remaining onions on top and bake 20 minutes more. |
