Southwest Style Cod Fillets |

Ingredients:
2 pound(s) fresh wild caught east coast cod fillets |
1/2 cup(s) shredded parmesan cheese |
1/4 cup(s) yellow corn meal |
2 tablespoon(s) all-purpose flour |
1 teaspoon(s) paprika |
1/2 teaspoon(s) black pepper |
vegetable cooking spray |
Directions:
1. Combine Parmesan cheese, cornmeal, flour, paprika and pepper in a plastic bag. 2. Place fish in bag and shake to coat. 3. Spray baking dish with vegetable cooking spray. Place coated fish fillet in the baking dish. 4. Sprinkle remaining cheese mixture over the fish. 5. Bake at 400 degrees Fahrenheit for 12 to 15 minutes depending on the thickness of the fillets or until the fish flakes when tested with a fork. |
