Quick and easy. A kid fav. Ingredients:
1 lb ground beef |
3/4 cup chopped onion |
1 (16 ounce) can kidney beans, rinsed and drained |
1 (14 1/2 ounce) can diced tomatoes, undrained |
1/2 cup uncooked instant rice |
1/2 cup water |
3 tablespoons chopped green bell peppers |
2 teaspoons chili powder |
1/2 teaspoon garlic salt |
1/2 teaspoon salt |
1 cup corn chips |
1 1/2 cups shredded cheddar cheese |
Directions:
1. In a skillet, cook beef and onion until meat is browned; drain. 2. Add next 8 ingredients; mix well. 3. Bring to a boil. 4. Reduce heat; cover and simmer for 20 minutes, stirring occasionally. 5. Remove from the heat. 6. Sprinkle with the corn chips and cheese. 7. Cover and let stand for 3 minutes or until cheese is melted. |
