This breakfast will start your day with a kick! Eat it alone, or put it on a warm tortilla and you have breakfast burritos. Ingredients:
12 large eggs |
1/2 lb. chorizo |
1 red onion (diced) |
2 fresh jalepanos (coarsly chopped) |
1 red bell pepper |
grated mexican cheeze mix |
2 tbsp. unsalted butter |
salt and pepper to taste |
2 large avacados |
2 tomatoes |
Directions:
1. preheat cast iron skillet to medium heat 2. saute onions and peppers in butter in skillet until onions are transparent 3. while onions and peppers cook, beat the eggs, dice the tomotos, and slice the avacodos into long strips. 4. add chorizo to skillet, cook approx 5 min. 5. add eggs, salt and pepper, and cook until almost done, then remove from heat. 6. (remember...eggs will continue to cook in cast iron after heat is off) 7. add cheeze and let melt. 8. Serve with slice of avacado and tbsp. of diced tomatos. 9. add to tortilla or eat by itself 10.
