5-Ingredient Fix Contest Entry. This recipe includes flavors from the southwest with black beans, corn and cheese. Yum! Ingredients:
1 (20 ounce) package simply potatoes diced potatoes with onion |
1 (15 ounce) can black beans, drained |
1 cup frozen corn kernels |
1 (10 ounce) container philadelphia santa fe blend cooking creme |
2 cups shredded mexican blend cheese |
Directions:
1. Preheat oven to 375 degrees. 2. Spray a 8x8 glass baking dish with cooking spray. 3. In a large bowl, combine potatoes, black beans, corn and cooking creme. Stir in half of cheese. Pour potato mixture into baking dish. Sprinkle with remaining cheese. 4. Bake for 25-30 minutes, or until cheese is golden brown and bubbly. 5. Remove from oven and serve. 6. Recipe serves 4-6 and can be prepared in one hour. |
