This is a unique meatloaf recipe. Very moist. My friend gave me this recipe and I know she got it out of a magazine but neither one of us know which one! It called for more cilantro and onions and I did cut these back. This is not a pretty meatloaf....just a great tasting one! Ingredients:
2 lbs ground beef |
3 eggs |
1 cup breadcrumbs |
4 garlic cloves, minced |
1 small red onion, minced |
2 -3 plum tomatoes, chopped |
1 1/2 cups shredded monterey jack cheese |
1/4 cup brown sugar |
1/4 cup cilantro |
1/4 cup worcestershire sauce |
2 tablespoons hot sauce |
2 teaspoons salt |
1 teaspoon pepper |
Directions:
1. Mix all ingredients together well. 2. Bake at 350F for 45 minutes. 3. Increase oven temperature to 425°F 4. Bake for 15 minutes more. 5. Let rest 10 minutes before serving. |
