If you have no food processor for this recipe, use a rolling pin to crush the tortilla chips in a resealable plastic bag and substitute chopped pecans for halves. To Health-it-up you can serve it on a bed of mixed greens for a light summer salad supper. - Very Good!! Ingredients:
1/2 cup corn tortilla chips, lightly packed |
1/2 cup pecan halves, toasted |
8 plum tomatoes, halved lengthwise |
1/3 cup diana marinade (spicy southwest flavour) |
salt |
pepper |
1/4 cup goat cheese, crumbled |
1/4 cup green pepper, finely chopped |
1/4 cup green onion, finely chopped |
Directions:
1. Pulse the tortilla chips and pecans in a food processor until finely crumbled; transfer to a shallow dish and reserved. Preheat the grill to medium. Toss tomatoes gently with Diana Marinade, season with salt and pepper. Dip the cut side of each halved tomato into the crumbs. Place on the grate cut-side-up. Grill, lid closed, for 5 minutes or until tomatoes are tender. Transfer to a serving platter; garnish with crumbled goat cheese, green pepper and green onion. |
