This is a casserole you can mix the night before and refrigerate; bake in the morning. Add fresh fruit and you are set to go. Ingredients:
12 eggs |
1/2 cup half and half |
1 can mexicorn |
10-6 inch tortillas |
cheese (4oz) |
salsa |
sour cream |
Directions:
1. Grease a 9 x 13 pan. 2. In mixing bowl combine: eggs and half and half 3. Beat. 4. Stir in mexicorn 5. Put tortillas in the bottom of the pan 6. Pour egg mixture over tortillas 7. Sprinkle with cheese 8. Cover 9. Refrig.over night 10. Heat oven to 375- 11. Cover with foil 12. Bake 25-30 min. 13. Let stand 5 min. 14. Uncover. 15. Serve with salsa and sour cream |
