Southwest Easy Oven Chicken Ingredients:
1 cup low sodium chicken broth |
1 (15 ounce) can black beans, rinsed and drained |
1 (15 ounce) can red kidney beans, rinsed and drained |
3/4 cup mild salsa |
2 garlic cloves, minced |
1 lb chicken breast, cut into 2-inch pieces |
Directions:
1. Preheat the oven to 350 degrees Fahrenheit. 2. In a 13 X 9 inch baking pan, combine the chicken broth, the black beans, red kidney beans, salsa and garlic. 3. Add the chicken and baste with some of the liquid. 4. Bake, stirring once, until the chicken is cooked through and the liquid is reduced, about 45 minutes. |
