From Land O Lake. Ingredients:
1 tablespoon land o lake butter |
1 1/2 cups cubed cooked ham |
1/2 cup finely chopped onion |
1/2 cup choppe red bell pepper |
1 (4-oz.)can chopped green chiles |
3 cups dairy ease reduced fat milk |
1 (16-oz.) packed frozen corn |
1 (14-oz.) can chicken broth |
1 teaspoon dried thyme |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 cup instant mashed potato flakes |
Directions:
1. *May substitute chorizo for ham 2. Melt butter in 4-quart saucepan until sizzling, add ham, onion, bell pepper and chilies. 3. Cook over medium heat, stirring occasionally, until onion and pepper are softened. 4. Add all remaining ingredients (except) potato flakes. 5. Continue cooking, stirring occasionally, until mixture comes to a boil. 6. Remove from heat and stir in potato flakes. 7. Serve immediatly. 8. 8 servings |
