Southwest Chicken Taquitos |

I was looking for a slightly different take on taquitos so I added my own little twist. Ingredients:
2 chicken breasts |
1/2 can black beans |
1/2 can corn |
2 tbsp. cumin (plus a couple of shakes) |
1 tsp garlic salt (plus a couple of shakes) |
dash black pepper |
12 corn tortillas |
1-2 cups vegetable or canola oil |
1/2 cup fresh chopped cilantro |
1 1/2 cups shredded cheddar or pepperjack cheese |
Directions:
1. Sprinkle chicken breast with black pepper, cumin, and garlic salt 2. Brown chicken 3. Chop chicken into small pieces 4. Combine beans, corn, chicken, cilantro, and the measured spices in a bowl. 5. Heat oil on Med. High in a deep pan. 6. Heat corn tortillas in the microwave with a wet paper towel wrapped around them about 45 seconds or until soft and easy to roll. 7. Scoop equal amounts of chicken mixture into each tortilla, top with cheese. 8. Roll tortillas tightly and place in oil, seam side down. 9. Fry about 1 minute and turn over with tongs, fry other side about 1 more minute. 10. Place on a pile of paper towels and soak up the oil. 11. Serve with salsa or guacamole for dipping. |
