I found this in my local newspaper's cooking section. It is different than some others in that it has hominy in it. Ingredients:
1 onion, diced |
1 red pepper, seeded and diced |
1 jalapeno, seeded and diced |
1 tablespoon vegetable oil |
15 ounces hominy |
15 ounces kidney beans |
15 ounces black beans |
16 ounces salsa (chunky) |
32 ounces chicken broth |
2 cups cooked chicken, shredded |
1/4 cup cilantro, chopped |
sour cream (to garnish) |
Directions:
1. In a pot over medium heat, saute onion, pepper and jalapeno in oil until soft, about 7 minutes. 2. Add hominy, beans, salsa and chicken broth. Bring to a boil, reduce heat and stir in chicken. Cover and cook 5 to 10 minutes more until heated through. Stir in cilantro. Serve with more cilantro and sour cream if desired. |
