These are just so darn good, we sometimes have them for a main course. I have made them smaller with wonton wrappers for parties and boy do they practically lick the plate. They are crunchy and zesty and spicy and cheesy all in the same bite! Read more ! I occasionally make them with firm tofu instead of chicken and they are still yummy!! So forget the calories and just enjoy them. Ingredients:
1 package chicken tenderloins |
2 packages eggroll wrappers |
1 can black beans drained |
1 can corn drained |
1 can diced green chilis |
3 scallions sliced thin |
diced pickled jalapenos (optional) |
1 package taco seasoning |
3 cups shredded cheddar jack cheese |
1/4 cup mayonnaise |
sour cream |
vegetable oil for frying |
Directions:
1. Cook chicken tenderloins and dice very finely 2. In a large bowl combine all ingredients except eggroll wrappers 3. Place a heaping tablespoon of mixture in each wrapper and roll as directed 4. In a large cast iron skillet heat oil and fry eggroll til golden brown 5. Drain on paper towels 6. Serve with sour cream for dipping and just enjoy! |
