Easy make ahead breakfast, easy to warm and go. Ingredients:
3 cups brown rice |
5/8 cups southwestern egg beaters |
1 large tomato, diced |
1/4 cup red onion, diced |
1/4 cup yellow pepper, diced |
1/3 cup skim milk |
4 oz mexican cheese, shredded |
1/2 tsp black pepper |
1/2 tsp cumin |
Directions:
1. mix all ingredients. 2. cook at 400 for 15min. in muffin pans. 3. freeze individual servings and reheat in microwave for approx 1min. |
