Southwest Barbecue Chicken Pasta |

This is great with rotisserie chicken from the market, and it's a fast dinner for busy weeknights. Ingredients:
3 cups cooked chicken, cubed or shredded |
1 cup barbecue sauce |
1 (15 ounce) can corn, drained |
1 (15 ounce) can black beans, drained |
1 lb cooked spaghetti, cooked and drained |
1 large avocado, cubed |
2 tablespoons olive oil |
1 large onion, diced |
1/2 cup cheddar cheese |
Directions:
1. In a small bowl, toss chicken in barbecue sauce until coated. 2. Saute onion in hot olive oil until soft and golden. 3. Place pasta in a large pot and pour onion mixture onto pasta, tossing to combine. 4. Toss corn, beans and chicken mixture into pasta and cook over low heat until heated through. Add avocado and toss gently to combine. Top with cheese. |
