Southern Yellow Squash with Onions |

This recipe is based upon my MIL's (she never measures anything). It is my family's favorite way to eat squash and I always make a double batch of it. Ingredients:
5 slices bacon |
5 -6 small yellow squash, sliced |
1 medium onion, chopped |
salt |
pepper |
Directions:
1. Fry bacon until crisp, remove from skillet. 2. Add chopped onion, cook until translucent. 3. Add sliced squash fry stirring frequently until squash is tender. 4. Season with salt and pepper. 5. Crush bacon and add back to pan. 6. Either yellow zucchini or crookneck squash work well in this dish. |
