Southern Vegetable Pie

This is good to fix during the peak off the squash season when everything is fresh out of the garden.
Ingredients:
1 large onion, very coarsely chopped
2 zucchinis, sliced
2 yellow squash, sliced
1 large bell pepper, sliced in large pieces
1/2 stick butter
salt and pepper to taste
2 cloves garlic, minced
1 cup mayonnaise
1 cup mozzarella cheese, grated
1 9 or 10 inch unbaked pie shell
Directions:
1. Saute vegetables, seasonings, and garlic in butter (you want these still crisp not soft)
2. Drain these really well. (very important)
3. Add drained veggies to pie crust.
4. Combine mayonnaise and cheese together; spread this over veggies.
5. Bake uncovered for one hour at 350 degrees.
