Don't remember where I got this, but it is so special, and I know that it is old . It is a sweet and comforting dish, and I believe a reminder of the past. Goes wonderfully well with pork. Just mix it up in one large bowl and pour it in a casserole. Read more . Almost like a dessert. Ingredients:
4 cups grated, raw sweet potatoes |
lemon juice, freshly squeezed |
2 cups granulated sugar |
1/2 cup powdered sugar |
1/2 brown sugar |
1 stick butter melted |
4 large eggs beaten |
3 cups milk |
1 teaspoon pure vanilla extract |
1 teaspoon cinnamon |
1 teaspoon nutmeg |
1/2 teaspoon allspice |
1/2 teaspoon cloves |
Directions:
1. Preheat oven to 350 degrees 2. Grate sweet potatoes, sprinkle with lemon juice, set aside 3. I mix this with a wire whisk.... 4. Add all sugars to a large bowl 5. Add spices, mix 6. Then add melted butter, and mix 7. Add the beaten eggs to the mixture and stir 8. Add milk and mix 9. Add grated sweet potatoes 10. Stir gently to combine 11. Pour into lightly greased casserole dish. 12. Bake for 1 hour 13. NOTE: I have always wondered why the powdered sugar , maybe the cook only had 2 cups granulated, 1/2 cup brown, and 1/2 powdered sugar. Or maybe she wanted to use 3 different kinds of sugar......interesting, I thought. |
