This is a recipe I obtained from a friend in my yoga class. She is a health nut and swears by this recipe. I made it and I have to agree with her, yummy and healthy all in one. Don't tell anybody about the healthy part and they'll love it even more. Read more . Enjoy Ingredients:
1-1/2 pounds yellow squash |
3 tablespoons bread crumbs |
2 tablespoons margarine |
2 egg whites |
1 tablespoon minced onion flakes |
2 teaspoons margarine |
Directions:
1. Preheat oven to 350. 2. Wash and slice squash then put in pan of water. 3. Cook on top of the stove until soft then drain well. 4. In a large bowl mash squash then add margarine, whites, onion and bread crumbs and mix well. 5. Pour mixture in greased pan then dot top with margarine and sprinkle remaining crumbs on top. 6. Bake for 45 minutes. |
