This is an easy and tasty way to make catfish. The mustard adds a nice tang but doesn't overwhelm the other flavors. It also helps to seal in the juices. I would serve this along with some hushpuppies. Ingredients:
3/4 cup yellow cornmeal |
1/4 cup all-purpose flour |
2 teaspoons salt |
1 teaspoon cayenne pepper |
1/2 teaspoon garlic powder |
4 catfish fillets |
yellow mustard |
vegetable oil |
Directions:
1. Heat oil in a large cast iron skillet to 350 degrees. About 1 1/2 inches depth. 2. Combine cornmeal, flour, salt, cayenne pepper and garlic powder. 3. Coat fish with thin layer of mustard on both sides. 4. Dredge catfish in cornmeal mixture. 5. Fry fish for about 5-6 minutes. 6. Remember don't overcrowd your pan or it won't be as crispy. I usually fry 1-2 fillets at a time. |
