Thick slices of onion simmered with milky kernels of corn give this creamy side dish its fresh-from-the-farm taste. Ingredients:
6 ears fresh corn |
1 cup 1% low-fat milk, divided |
2 teaspoons cornstarch |
2 (1/2-inch-thick) onion slices |
1/4 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Remove and discard husks and silks from corn. Cut corn from cobs, scraping cobs well to remove all milk. Set corn aside. 2. Combine 1/4 cup milk and cornstarch; set aside. Combine remaining 3/4 cup milk and onion in a large saucepan; bring to a boil over medium heat. Cover, reduce heat, and simmer 5 minutes; remove and discard onion. 3. Add corn to hot milk, and bring to a boil. Reduce heat, and cook 5 minutes, stirring often. Add cornstarch mixture, salt, and pepper; cook, stirring constantly, 3 minutes or until thickened and bubbly. |
