My husband makes this for me from time to time. It is one of my favorite casserole's! I never knew that I could love squash so much! It is a great side dish or a main course! Yummy! :) Easy and affordable! Ingredients:
5 or 6 medium size yellow squash |
2 10-oz.cans of cream of mushroom soup |
1 box of garlic and herb stove top stuffing mix |
2 tablespoons of minced garlic |
3/4 cup of sour cream |
1/2 cup of diced yellow onion |
Directions:
1. preheat oven 350 degrees 2. slice squash into 1/4 inch slices and boil till tender 3. In a mixing bowl, add 1/2 of the stove top stuffing mix and the remainder of the ingredients and mix until well combined. 4. drain squash and add to mixing bowl. Stir until blended. 5. Pour into a square casserole dish and cover with the remainder of the stove top stuffing mix. Place in preheated oven and bake for 30 to 35 min. or until bubbling and golden brown. 6. Let stand for 5 to 10 min. Serve hot 7. (refrigerate left overs for up to 3 days.) |
