This is a recipe by my former food supervisor Eula Gibson, from my Corbin, Kentucky restaurant. You don't have to be a Southerner to enjoy this dish! Ingredients:
3 cups milk |
1 teaspoon salt |
1 teaspoon sugar |
1 1/4 cups cornmeal |
3 eggs |
1 tablespoon baking powder |
2 tablespoons cold water |
2 tablespoons butter |
Directions:
1. Heat 3 cups milk, 1 teaspoon salt and 1 teaspoon sugar to a moderate temperature in a saucepan. 2. Add 1 1/4 cups corn meal to the milk. 3. Return to heat and cook as mush. 4. Beat together 3 eggs, 1 tablespoon baking powder, 2 tablespoons cold water, and 2 tablespoons butter. 5. Beat the egg mixture into the mush. 6. Pour mixture into casserole dish or pan. 7. Bake in 400 F degree oven for 25 - 30 minutes. 8. Slice and serve hot with my Kentucky Whipped Butter . |
