Southern Scalloped Tomatoes |

An old Southern classic that deserves a new look. Great for less than perfect tomatoes during the season, or canned during the winter. Ingredients:
6 to 8 (approximate) tomatoes, unpeeled |
or 2 cups canned, drained |
2 cups thinly sliced onions |
4 tbs butter, divided |
2 tsp salt |
1/4 tsp black pepper |
2 tbs brown sugar |
2 tsp dried basil or 1'/3 cup fresh (preferred) |
1 tsp minced fresh garlic |
1 tsp oregano (optional) |
2 cups bread cubed |
Directions:
1. Saute onion in 2 tbs butter until wilted, set aside 2. Saute bread cubes in 2 tbs butter in same pan used for onion, you only want to coat the cubes and this should only take a minute or two, set aside 3. In greased casserole, place tomatoes and all seasonings, sugar and onion and mix to distribute ingredients evenly. do not stir. 4. Top with bread cubes 5. Bake at 350 uncovered for 35 to 40 minutes. 6. Note: You could add some bacon bits 7. Note:You could add the oregano |
