Delicious side. Popular where rice is grown. Especially good in the summer. Ingredients:
1 tablespoon vegetable oil |
1 tablespoon vinegar |
1/4 cup sliced green onion |
1/2 teaspoon salt |
1/2 teaspoon curry powder, optional |
1-1/2 cups cold cooked rice |
1 cup minced celery |
1 (10 ounce) can +small+ peas, drained |
3/4 cup mayonnaise |
paprika and pepper to taste |
Directions:
1. In bowl, combine oil, vinegar, onion, salt and curry powder (if using) 2. Stir in rice, celery, peas and mayonnaise 3. Chill until ready to serve 4. Before serving, sprinkle with paprika |
