SOUTHERN RICE PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Turner Estate in Mesquite, Texas in 1994. Ingredients:
1 cup uncooked rice |
4 cups milk |
2 tablespoons butter |
1 cup granulated sugar |
4 eggs |
1/4 teaspoon cinnamon |
1/4 teaspoon mace |
1 lemon rind grated |
Directions:
1. Soak rice in 2 cups milk for 2 hours then add remaining milk and cook over low 20 minutes. 2. Set aside to cool then heat oven to 350 and butter a 2 quart casserole. 3. Work butter until soft then work in sugar thoroughly and beat eggs until frothy. 4. Add sugar mixture and rice then flavor with cinnamon, mace and lemon rind. 5. Pour into casserole and bake for 45 minutes then serve warm. |
