Yep, it's from Southern Living. Ingredients:
1 cup sliced celery |
3/4 cup sliced green onion |
3/4 cup chopped green bell pepper |
2 3/4 cups chicken broth |
1 teaspoon poultry seasoning |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 1/2 cups long grain rice, uncooked |
1/4 cup chopped pecans, toasted |
Directions:
1. Place a large nonstick skillet that has been sprayed with cooking spray over medium-high heat until hot. 2. Add in the first 3 ingredients; stir/saute until crisp-tender. 3. Stir in broth the the next 3 ingredients; bring to a boil. 4. Add rice to a shallow 2-quart baking dish; add hot broth mixture. 5. Cover and bake in a 350° oven for 30 minutes or until the rice is tender and the liquid is absorbed. 6. Sprinkle with pecans. |
