If you are a fan of pecan pie, these bars will satisfy the crave with slightly fewer calories – but then, if you’re going to eat these, you probably can’t think too much about calories! Ingredients:
crust |
1 cup flour |
⅓ cup brown sugar |
1/4 butter, softened |
1/4 cup finely chopped pecans |
1/4 teaspoon baking powder |
topping |
1/4 cup brown sugar |
2 tablespoons flour |
1/2 teaspoon salt |
3/4 cup white or dark corn syrup (i use white) |
1 teaspoon vanilla extract |
2 eggs |
3/4 cup finely chopped pecans (chopping them finely will allow you to cut them into bars easier) |
Directions:
1. In a large bowl, combine all crust ingredients; mix on low speed until crumbly. 2. Press crust into an ungreased 9x13 pan. 3. Bake at 350 degrees for 10 minutes; remove pan from oven. 4. Combine topping ingredients, except pecans; beat on medium speed until well blended. 5. Pour topping over hot crust; sprinkle with pecans. 6. Bake an additional 20 to 25 minutes, until golden brown. 7. Cool completely before cutting into bars. |
