1 white cake mix* (duncan hines classic white, my choice) |
2 large eggs |
1-8 ounce container sour cream |
1/2 cup water |
1/3 cup vegetable oil |
*note: spice, chocolate or your favorite cake mix may be substituted |
after baking, these layers can be spread with icing or filling between the layers, then top and sides iced. |
this is a quick easy, very pretty icing for the cake, but if using this icing, enjoy the cake the day it is iced, because it will not hold up for longer storage |
divinity frosting (a no-brainer |
1 package home-style fluffy white frosting mix (betty crocker home style white frosting mix) |
1/2 cup boiling water |
1/3 cup light corn syrup |
2 teaspoons vanilla extract (i like to add almond extract also) |
16 ounces powdered sugar |
1-1/2 cups chopped pecans, toasted |
Directions:
1. In large mixer bowl, beat all ingredients, low speed with electric mixer 30 seconds or just until moistened 2. Beat medium speed 2 minutes 3. Pour batter into 4 greased and floured 8 inch round cake pans 4. Bake at 350 degrees for 15-17 minutes until a wooden pick inserted in center comes out clean 5. Cool in pans on wire rack 10 minutes 6. Remove from pans, cool completely on wire rack 7. NOTE: Can wrap layers in plastic wrap, and freeze 2 hours or up to 1 month, if desired 8. NOTE: To prepare 9 inch Sour Cream Cake Layers, use 4 greased and floured 9 inch round cakepans 9. Bake at 350 degrees for 12-14 minutes 10. DIVINITY FROSTING 11. Combine first 4 ingredients in a 4-quart mixing bowl 12. Beat at low speed with a heavy duty electric mixer 1 minute or until mixture is blended 13. Beat mixture at high speed 3-5 minutes or until stiff peaks form 14. Gradually add powdered sugar, beating at low speed until blended 15. Stir in toasted pecans 16. Spread immediately on cake 17. Can garnish with pecan halves or stemmed cherries, (pat dry with paper towel, let dry thoroughly and place on cake immediately before serving) |
