Yummy-serve with hushpuppies, grits, and coleslaw. Ingredients:
1 1/2 lbs catfish fillets |
1 egg, beaten |
garlic salt |
1/2 cup flour |
1/2 cup cornmeal |
salt and pepper |
cayenne pepper |
vegetable oil (for frying) |
Directions:
1. Heat a heavy skillet with 1-inch of oil. 2. Wash the catfish. 3. Beat the egg. 4. Lightly pepper and garlic salt the fish. 5. Mix the flour and cornmeal together; add salt and pepper to flour mix and stir to combine. 6. Dip the catfish in egg. 7. Dip in the breading twice. 8. Put the fish in hot oil. 9. Cook until golden brown and tender in the middle, about 8-12 minutes. 10. Drain on paper towels. 11. Optional: Sprinkle with Louisiana hot sauce. |
