This is one of the side dishes my parents used to cook when I was a little girl. You have to know they would be in their 90s now and had deep Southern roots. It is hard to do because sweet potatoes are so hard to peel and cut into slices. Read more .There is no need for sugar or spices because they are already so sweet and tasty so this Southern dish is well worth any trouble they may cause peeling and slicing them. Ingredients:
3 good sized sweet potatoes |
3 tbs. butter |
Directions:
1. Peel and slice the potatoes from end to end about 1/3 inch thick. 2. Wash the potatoes. 3. Melt the butter in a large skillet, I prefer an iron skillet. 4. Put the potatoes in the hot butter and fry ,stirring occasionally. 5. They will be done when tender, about 15 minutes. |
