An old southern way to fry okra. It's mighty delicious. Ingredients:
1 pound fresh okra, cut into 1/2 inch thick slices (discard the tips and stem ends) |
2 cups buttermilk |
1 cup self-rising cornmeal |
1 cup self-rising flour |
3/4 teaspoon salt |
1/4 teaspoon ground red pepper |
crisco for frying |
1/4 cup bacon drippings |
Directions:
1. In bowl, place okra, stirring in buttermilk gently 2. Cover, chill for about 40 minutes 3. In large bowl, combine cornmeal, flour, salt and pepper, whisk 4. Remove okra from buttermilk with slotted spoon, discarding buttermilk 5. Dredge okra in batches in the cornmeal mixture 6. Spoon Crisco into a Dutch oven or a cast iron skillet (when melted it needs to be about 2 inches depth) 7. Add bacon drippings 8. Heat on med high or until about 375 degrees 9. Fry okra in batches for about 4 minutes or until golden 10. Drain on paper towels |
