Southern Country-style Corn Pudding |

This is a comfort food dish. Brings back fond memories of grandma's house and Sunday dinners. I have also baked this dish totally in the microwave. Ingredients:
1 (16oz.) can whole kernel corn |
1 cup sour cream |
1 (11 oz.) can cream-style corn |
1 (8 oz. to 12 oz.) pkg. corn muffin mix |
or 11/2 cups self rising corn meal |
2 eggs, slightly beaten |
1 cup cheddar cheese, grated |
1/2 cup margarine or butter, melted |
Directions:
1. Preheat oven to 350°. 2. Use ungreased 9x13-inch pan. 3. Mix all ingredients, except cheese. 4. Pour into pan. 5. Bake 15 minutes. 6. Sprinkle top with cheese and bake 20 minutes or until center is set. |
