This is a southern-tradition dish. It can be served with smoked beef tenderloin, grilled chicken, or sliced country ham. Great accompaniment. Ingredients:
3 cups fresh corn, (can use frozen niblets, but fresh is best) |
3 eggs |
1 cup heavy cream |
2 tablespoons sugar |
1 tablespoon flour |
1 teaspoon salt |
1 teaspoon baking powder |
1/4 pound melted butter |
Directions:
1. Beat eggs, add heavy cream and slowly add the dry ingredients. Add corn and stir in melted butter. 2. Pour the mixture into a small greased casserole dish and bake at 350 degrees for 45 minutes. 3. Serves 4. |
