My Aunt gave me this recipe and she said it was the one my Mamma always used. I remember something Mamma fried that was delicious and had corn in it so I am guessing this is it. I haven't made it yet but wanted to go ahead and share. Ingredients:
6 ears fresh corn |
dash salt |
2 tbs. flour |
2 egg yolks, well beaten |
3 tbs. milk |
2 egg whites, beaten stiff |
Directions:
1. Cut corn from cobs. 2. Combine with salt,and flour. 3. Add egg yolks. 4. Stir in milk. 5. Fold in egg whites. 6. Carefully drop by teaspoonfuls into hot oil, a deep fryer works best but a large skillet with about 1/4 inch of oil may be used but you will have to flip the corn cakes. 7. Fry until light brown. |
