My Sis Lydia and I made these when I was going to make her favorite rum balls and had no rum! Ingredients:
3 cups vanilla wafers, crushed |
1 cup pecans, chopped fine |
1 cup powdered sugar |
3 tablespoons light karo syrup |
2 1/3 tablespoons dark cocoa, special dark |
1/2 cup southern comfort |
powdered sugar, for coating the cookies |
colored crystal sugar, for coating the cookies |
Directions:
1. Place wafers and pecans in food processor and pulse till crumbly. 2. Add the next 4 ingredients and pulse till smooth. 3. Shape into balls about 1 inch in diameter. Using wet hands and cool kitchen so they don`t stick and for easy handling. 4. Roll in powdered sugar and chill. 5. Or if this method works for you try keeping finger and palms dusted with sugar while shaping cookies. 6. Better if stored in an air tight container for at least a week! |
