Southern Chicken Salad Casserole |

I have not made this yet, but it sounds really good. From the church potluck supper cookbook. Ingredients:
4 cups diced cooked chicken |
2 cups condensed cream of chicken soup |
2 cups diced celery |
4 tablespoons minced onions |
2 cups slivered almonds |
1 cup mayonnaise |
3/4 cup chicken stock |
1 teaspoon salt |
1/2 teaspoon pepper |
4 tablespoons lemon juice |
6 hard-boiled eggs, chopped fine |
1 cup buttery cracker crumb, crushed fine |
Directions:
1. Preheat oven to 350 degrees. 2. Combine the above ingredients, except the cracker crumbs. 3. Put into a 3-4 quart casserole. 4. Cover with cracker crumbs. 5. Bake at 350 degrees for 40 minutes. 6. Serve hot. |
