Southern Cast Iron Skillet Sweet Potato and Pecan Casserole |

We went south for Thanksgiving this year and this was served at dinner. This is baked and served right in a cast iron skillet; you can use a 12 or 15 inch cast iron skillet. Scrumptious; it's a side dish and dessert all in one! Prep time does not include the cooking and mashing of the sweet potatoes. Ingredients:
3 cups mashed sweet potatoes |
1 cup sugar |
2 eggs |
1/2 cup milk |
1 teaspoon vanilla |
1/2 cup butter |
1 cup brown sugar |
1/3 cup self rising flour |
1/3 cup butter, melted |
1 cup pecan halves |
Directions:
1. Preheat oven to 350 degrees. 2. Mix the first 6 ingredients and pour into a greased cast iron skillet. 3. Mix together the brown sugar, flour and melted butter; sprinkle on top of sweet potatoes. 4. Sprinkle the 1 cup of pecans on top. 5. Bake for 30 minutes or until a little brown and bubbly. 6. Serve straight out of the skillet. |
