This is from a healthy recipes cook booklet and it is delicious! Ingredients:
1 1/2 cups yellow cornmeal |
1/2 cup all-purpose flour |
1 1/2 cups fat-free buttermilk |
2 tablespoons canola oil |
2 teaspoons baking powder |
1 teaspoon sugar |
1 teaspoon salt |
1/2 teaspoon baking soda |
1/2 cup egg substitute |
Directions:
1. Heat oven to 450 degrees. 2. Grease a 10-inch cast iron skillet. 3. Mix all ingredients. Beat vigorously 30 seconds. 4. Pour batter into pan. 5. Bake about 20 minutes, until golden brown. 6. Serve warm. |
