SOUTHEAST ASIAN SHRIMP GRAPEFRUIT SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Daly Estate in Fort Worth, Texas in 1992.
Ingredients:
1-1/2 pounds raw shrimp in shells
1/2 teaspoon salt
3 tablespoons fish sauce
1 tablespoon granulated sugar
juice of 2 limes
6 cups lettuce washed and dried
2 grapefruit peeled and sectioned and each section cut in half.
1/4 cup chopped mint
1/4 cup chopped cilantro
1/8 teaspoon dried red pepper flakes
1/2 cup chopped dry roasted peanuts
Directions:
1. Put shrimp in saucepan with salted water to cover then bring to boil and turn off heat.
2. Allow to sit 5 minutes then cool in refrigerator or under cold running water then peel.
3. Combine fish sauce with 2 tablespoons water, sugar and lime juice then whisk until smooth.
4. Arrange lettuce on 4 plates then top each portion with a few grapefruit pieces.
5. Add some shrimp, mint and cilantro then drizzle with dressing.
6. Sprinkle with the minced chilies and chopped peanuts.
