SOUTHEAST ASIAN SHRIMP GRAPEFRUIT SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Daly Estate in Fort Worth, Texas in 1992. Ingredients:
1-1/2 pounds raw shrimp in shells |
1/2 teaspoon salt |
3 tablespoons fish sauce |
1 tablespoon granulated sugar |
juice of 2 limes |
6 cups lettuce washed and dried |
2 grapefruit peeled and sectioned and each section cut in half. |
1/4 cup chopped mint |
1/4 cup chopped cilantro |
1/8 teaspoon dried red pepper flakes |
1/2 cup chopped dry roasted peanuts |
Directions:
1. Put shrimp in saucepan with salted water to cover then bring to boil and turn off heat. 2. Allow to sit 5 minutes then cool in refrigerator or under cold running water then peel. 3. Combine fish sauce with 2 tablespoons water, sugar and lime juice then whisk until smooth. 4. Arrange lettuce on 4 plates then top each portion with a few grapefruit pieces. 5. Add some shrimp, mint and cilantro then drizzle with dressing. 6. Sprinkle with the minced chilies and chopped peanuts. |
